Support Capturing Attester Instances in EvidenceCreationCb #42

The current implementation of EvidenceCreationCB uses a fn pointer type, which prevents closures from capturing external variables.

As a result, a Regl attester instance cannot be used when generating evidence. Updating the callback type to use FnOnce (or another appropriate closure trait) would allow captured state and enable passing attester instances through closures.
