docs(7ya-lifebook): clarify source compliance fields

What does this PR do?

Updates the existing 7YA Lifebook source package so archive release fields are explicit and the package scope is clear. Empty archive fields are replaced with non-invented values such as pending_release_capture and not_recorded, and the README clarifies that PDF, DOCX, and screenshots are generated later as release artifacts.
