docs(release): roadmap refresh, perf baseline, 1.0 finish-line scope#370

Conversation
…he 1.0 finish line Updates the roadmap Status to rc.3 and adds a Release-sequencing section (lean 1.0 freezes the API; 1.1 = Encoder #341 + VFS plumbing #297/#302; 2.0 = full de-sandboxing). Trims the A13 release plan's stale blocker list and over-specified DX gate to the gates that actually remain. Adds benchmarks/BASELINE.md recording the Luerl gap after the 1.0 perf pass.

Docs-only. Captures the decisions and state for the 1.0.0 cut.
1.0.0-rc.3; new Release sequencing section recording the agreed plan:Lua.Encoder+defluaauto-marshalling (Ergonomic encode/decode for deflua (Lua.Encoder protocol + auto-marshalling) #341) and VFS plumbing (Make os operations safe by default with VFS #297 / PR feat(stdlib): route os/require file IO through a virtual filesystem #302), deny-list unchanged.os/iorun against the VFS (observable behavior change → honest major).Lua.dbg,mix lua.bench/lua.suite) down to the gates that actually remain (suite, one-time perf check, docs).chunkpath after the 1.0 perf pass (see perf(stdlib): close the Luerl gap on string.format and table.sort #369), with measurement discipline notes (serial, quiet machine) and the list of optimizations.
