Set the CMake executable version and vcpkg manifest version to
1.0.0for the user-requested v1.0.0 stable release. All release content was integrated through #112; release notes are indocs/releases/v1.0.0.md.Validation: source changes passed Web tests/build, strict gates and the full Windows suite (6,161 passed, 9 skipped, 0 failures, one disabled). Final versioned binaries, upgrade tests and package checks are required before tag publication; Linux CI is still running. This PR changes only version metadata.
