Routes vulnerability reports to security@simtabi.com, the disclosure inbox, instead of the community address, and names GitHub private vulnerability reporting (enabled here) as the preferred channel.

Carries 1 commit(s) that were committed locally on main and never pushed; rebased onto the current main.

opensource@simtabi.com is the community address; security@simtabi.com is the
dedicated disclosure inbox per the org convention, kept separate so a report is
never buried in a feature-request thread.
