docs: add Quote component documentation

Summary

• Add docs/QUOTE_COMPONENT.md documenting the Quote UI component
• Covers all props with types, defaults, and descriptions
• Includes usage examples (basic, carousel navigation, copy callback, custom icon)
• Documents gesture support (swipe, pinch, tap) and iOS toggle behaviour
• Documents copy-to-clipboard mechanics, accessibility attributes, and dark mode

Test plan

• Verify all props in the table match the current Quote.tsx interface
• Confirm code examples render without TypeScript errors
• Check markdown renders correctly on GitHub
