Removes the extension catalog (now maintained in pkimm-extensions), the integration converters (now in pkimm-integrations), and the retired Excel assessment tools. Trims the consistency validator's now-unused catalog and compatibility checks, repoints the documentation and the extension schema to the external repositories, and updates the 2.0.0 release notes. The extension framework and schema remain in this repository.
