Clean-up volumes in docker compose for PostgreSQL container #3287
Description
docker compose configurations ensure that the postgresql container mounts the same data volume as the manager container.
This used to be required for the export functionality but this is no longer required since the improvements done in PR #2020.
Clean-up the docker compose configuration and some incorrect indications in tests and docs.

A similar clean-up can probably be done in custom projects, this was not covered by this issue and should probably be discussed in SU / communicated to project managers.
