using what we tell folks to install in public docs
prior to this commit, an older version of the gateway api was installed and that lead to failures in CI with this message: Installing CRDs with version before v1.5.0 is prohibited by default. Uninstall ValidatingAdmissionPolicy safe-upgrades.gateway.networking.k8s.io to install older versions.
