feat: expose cvlt version and mixed-owner probe

Changes

• expose the release package version through cvlt --version and -v
• verify the compiled version on every release platform
• add a value-safe live mixed-owner read/inject/run probe

Testing

• bun test node/src/ cli/src/ (74 pass, 1 optional OS-key-store skip)
• npm run build:sdk
• bun run build
• compiled development binary reports dev
• bash -n scripts/e2e-vlt-mixed-owners.sh

Notes

• The checked-in live probe is parameterized because deployed credentials determine which two owners are accessible. The current dev profile exposes one org and org creation is disabled, so release verification supplies the actual fixture references separately.
