Rename desktop app to Sentinel.LogViewer

Goal

Rename the desktop application project Sentinel.NLogViewer.App to Sentinel.LogViewer so project, assembly/exe, namespaces, and paths match the product name already used by the MSI, Chocolatey package, and shortcuts.

Out of scope: WPF libraries (Sentinel.NLogViewer, Sentinel.NLogViewer.MaterialDesign), Chocolatey package ID, MSI product name.

Scope

• Rename folder/csproj: app/Sentinel.NLogViewer.App → app/Sentinel.LogViewer
• AssemblyName, RootNamespace, StartupObject → Sentinel.LogViewer
• C#/XAML namespaces Sentinel.NLogViewer.App* → Sentinel.LogViewer*
• Solution / NLogViewer.CI.slnf / project references
• CI publish paths (commit.yml, release.yml, publish-dev.yml)
• WiX: harvest folder, ProjectReference, shortcuts/file association targeting Sentinel.LogViewer.exe
• Docs that still mention Sentinel.NLogViewer.App
