ci: pin iOS job to macos-15 for Xcode 16.4 - #9

macos-latest is now macOS 26, which only ships Xcode 26.x, so setup-xcode fails looking for 16.4. Pin the runner until the example moves off RN 0.85.

Problem
macos-latest now maps to macOS 26, which only ships Xcode 26.x. The iOS job still asks for 16.4, so setup-xcode fails before the example builds.
Approach
Pin the iOS job to macos-15, which still has Xcode 16.4. Keep the version pin until this example moves off RN 0.85.
