This PR proposes relicensing the project from LGPL-3.0 to MIT.

The main reason for this change is that MIT better reflects how we want bedrock-v projects to be used. We want the code to be easy to reuse in other projects, including commercial and closed source software without imposing copyleft requirements on downstream users.

LGPL allows proprietary software to use the project, but still places requirements on modifications to the LGPL covered code when those modifications are distributed. For bedrock-v, we don't have a strong reason to require that. If someone modifies our code, builds something useful with it or even sells software based on it, that is not something we want the license to discourage or restrict.

This is especially relevant for server software, where projects are often modified and operated as private infrastructure rather than distributed. In those cases, LGPL's copyleft requirements provide little practical benefit to us anyway.
