docs: partner routing api#6

- Refocus api/overview around the partner Quote API; drop Subgraph and
Price API sections (we don't offer those as Ring APIs)
- Rewrite api/routing/overview as a partner-facing reference: required
x-partner-id header, simpler quick-start curl, explicit response-field
guidance (methodParameters.{to,calldata,value}), Ethereum-mainnet-only
scope, swapper warning, mailto:contact@ring.exchange for access
- Hide the Subgraph subcategory from the APIs sidebar (files kept on
disk for now)
- Re-enable the APIs entry in the navbar
- Bump Routing API to position 1 in the APIs sidebar
