The Star History chart was removed in 7d52692 (docs: README v6.4.0 + remove Star History). It is currently broken because the upstream stargazer API restricts access, so this commit restores the chart at its original location in the Activity section with a working provider.

The Star History chart was dropped in 7d52692 after it broke due to GitHub stargazer API restrictions. This PR restores it in the Activity section using a working provider, so visitors can once again see the project's star growth over time.
