feat : Option to select model in glean chat api

right now there is no option to select AI model in glean chat API , will like to bring your concern here , recently glean added that model selection in UI but we also need to have it in developer apis as well

I think we'll have to update the APIs to support this, I'll try to circle back with themes internally to see what the plan forward is here.

This is still actively in flight. We have to refactor a little bit about how the internal system works in order to expose it properly in the REST API. I'll try to update here once we have a more concrete final design for the REST API.
