Switch Discover views from the View as menu

Summary

Discover replaces the Documents, Patterns, and Field statistics tabs with a toolbar dropdown. The count stays on the left. A View as button opens Documents, Patterns, and Field statistics. Several Discover pages still say tab and show the old toolbar. Screenshots on those pages need an update.

Why this needs docs: Published Discover how-tos still tell users to click tabs that no longer exist.
