Change the maven repository configuration so that jitpack.io repository gets used as the last resort

When building the library, dependencies will first be looked up on jitpack.io repository. This doesn't really cause harm, but is not a nice solution:

Now I found the reason why jitpack.io has been added, it seems to be this library: https://github.com/tmtsoftware/embedded-keycloak .

In this case, I think it's better to have central defined as the first repository and jitpack as the second.
Maven doesn't seem to support this, but it can be achieved with a hack: https://stackoverflow.com/a/41810983 .
... Or just switch to Gradle where there's proper control of the dependency resolution and what repository to use.
