Allow custom (and optional) kwargs to be passed to the visualisation functions

Allow the [visualisation functions](https://github.com/ISARICResearch/IsaricAnalytics/blob/main/isaricanalytics/visualisation.py) to allow custom optional keyword arguments to be passed in. This may well be required by some users for full plot customisation.
