[Docs] Lower-friction onboarding: example configs & docs

Problem: Limited current documentation and examples.

Desired functionality:

• Provide a more detailed documentation, focusing on first time users. E.g., explain how to run different workloads, document what parameters exist and how to change them.
• For each component, ensure the code is sufficiently well documented.
• Provide additional configuration example files.
• Ensure the whole workflow of the simulator is documented.
